FFWD | Hurry Up and Wait Roast Chicken

Loving this recipe because I just have to add some oil, salt and pepper to this combination and put the skillet into the oven. It saves a lot of time too since I can do my stuff while waiting for the chicken to be ready. Since there are only two of us, I used two chicken thighs instead of the whole chicken. Of course, in my family, vegetables are important and to complete this meal, potatoes, cauliflower and carrots are thrown in.

Both Ken and I had a scrumptious dinner! Yummy!

  1. There are only two of us in my family too, but roast chicken is my husband’s favorite and so I usually buy a whole bird and he is set for a few days with the leftovers. Your one skilled meal looks delicious, I love these easy ones.

    • I wouldn’t have mind leftover except for the fact that it’s the weekends and that means the kitchen is taking a rest. Hah…Thanks for your encouragement!

    • I might try this again when we have guests over. Seems like it’s rather troublesome but if it results in a delicious meal, we should give it a try eh? ;p

  2. Oh man that pan of dinner looks amazing ! So fun that you tried this with the chicken thighs. With only hubby home now that will be a great way for me to revisit this recipe (sans all that high temp flipping…..). Great job ~
